Spicy Bean Stew

My diet nowadays revolves around legumes, lentils, vegetables, eggs, whole grains, and fish. I know how to cook only simple meals using those ingredients for I've never learned how to cook elaborate meat-based dishes. I have neither the skills nor the patience for it. 

Today I prepared an easy, plant-based dish, which is also one of my favorites: spicy white bean stew. Here are the ingredients:

  • 1 1/4 cups white kidney beans soaked in water overnight 
  • 2 large carrots
  • 3 large bell peppers
  • 8 pcs medium-sized chilli peppers (labuyo), chopped 
  • 3 medium-sized tomatoes
  • 500 g tomato sauce 
  • 6 garlic cloves, minced and chopped 
  • 1 large red onion, chopped 
  • 1 tsp black pepper
  • 1 tsp cayenne pepper
  • 1 tbsp Spanish paprika
  • 1 tsp ground cumin 
  • 1 tbsp olive oil
  • 2 tbsps soy sauce
  • salt
I drained the beans, placed them in a pot, added water, and let them boil for 30 minutes or until they're cooked. While the beans are boiling, I sautéed the garlic, chilli pepper, onion, and tomatoes. I then added the paprika, cayenne, cumin, carrots, bell peppers, soy sauce, and 3 tbsp of broth from the beans. When the vegetables were half-cooked, I stirred the mixture into the beans, added the tomato sauce, and let it boil. I then added maple syrup, salt, and black pepper. 

The bean stew turned out to be very spicy, exactly how I wanted it to be. I cooked enough for six servings. Now I don't have to worry about my meals for the next few days.
